Contemporary Italian cooking is the deal, with key ingredients imported from the Motherland: pearls of Sardinian fregola lend authenticity to a fish-soup starter, and Tuscan sausage stars alongside gnocchi, sage, lemon and lovage. The menu is evenly divided between fish and meat, the former extending to pan-fried swordfish fillet with misticanza, chill and lemon, while heartier fare could be shoulder of salt marsh lamb with peperonata and salsa verde. Finish with pear and ginger mousse with blueberries, shortbread and rum crème anglaise.
