This glass-fronted restaurant, named after Peru's capital, brings that country's contemporary cuisine to the West End. Excellent Peruvian ingredients are the backbone, all handled confidently and skilfully. Start with slices of raw scallops with velvety yellow pepper purée and fresh-tasting ground and dried muña mint corn, or perhaps a simple salad of radishes, red potato, avocado and passionfruit. Tender and juicy duck breast escabèche may follow, with roast Andean potatoes and cylinders of red and purple mash, or warm salmon céviche with plantain majado, aji limo pepper and ginger. Palate-bursting flavours are also evident in puddings like cactus mousse with crisp wafers of rocoto peppers, meringue and coconut.
