Spread over two floors, this swanky Chinese restaurant is decorated in rich hues, with arty Chinese photographs on the walls. Kai aims to show the diversity of Chinese cuisine and the cooking is noted for its accurate timing, judicious use of spicing and seasoning, and its subtle combination of flavours and textures. You could take refuge in the comfort of classics such as crispy duck and sweet-and-sour pork, but why not get off to a flying start with deep-fried soft-shelled crab, in a crisp batter spiked with garlic, chilli and shallots, and pointed up with green mango julienne, or a decadent fusion idea pairing pan-fried foie gras with caramelised cashews, white pepper, spring onions, its richness cut with grapes and passionfruit dressing? Next up, top-class Ibérico pork loin comes with bean and shrimp crumble, Washington apple compôte and Granny Smith jelly. The menu opens unusually with a page of desserts, showing how seriously they are taken here, and Amadei chocolate fondant with pistachio ice cream, crumbs and powder shows the creative approach.
