The acquisition of Cannizaro House is something of a key-change for the Hotel du Vin group. Its hotels are always highly individual buildings with personality to spare, but not as eye-poppingly posh as this late-Georgian mansion. Seared tuna with an egg yolk and Shetland black potato makes a bold opening statement. European traditions are creatively tweaked, as when whipped duck rillettes with Agen prunes are given a pain d'Úpices dressing, or fermented truffle lights up a main-course risotto enriched with mascarpone as well as parmesan. Meals conclude either with Neal's Yard cheeses, or an ingeniously constructed dessert such as spiced morello cherry crumble with walnut snow.
