The Brown's Hotel dining room has undergone many manifestations, but the present one, under Mark Hix, is one of the most inspired. Against a backdrop of work by contemporary British artists, including Tracey Emin and Bridget Riley, Hix's menus receive dazzling execution. Thoroughbred British produce and foraged foods pour forth on menus that encompass crispy duck salad with pickled cherries and wild herbs, and seared scallops with wild boar bacon and chanterelles. Fine prime ingredients such as seasonal game are treated with respect, not muddled into a crowd of supporting characters, so everything makes perfect sense. As does treacle tart served with Neal's Yard crème fraîche.
