Heston Blumenthal may be best known for his cutting edge molecular cooking, but his fascination with culinary history underpins the food served within the luxurious setting of the Mandarin Oriental Hotel. A time-travelling trip through half a millennium of British cooking is recreated by executive chef Ashley Palmer-Watts, who cooks dishes developed with his Fat Duck mentor. As befits a venue overlooking Hyde Park, the setting is grand yet understated, but a waspish sense of humour is evident in jelly mould light fittings. A floor-to-ceiling glass wall kitchen allows diners to observe the chefs at close quarters - watching pineapples turning on clockwork rotisseries, for example. The ideas may be centuries old, but the techniques are very much of the moment. A starter of Earl Grey tea cured salmon with lemon salad, gentleman's relish, wood sorrel and smoked roe is evidence that the Georgians knew all about flavour combinations and a Victorian-era Hereford rib-eye with mushroom ketchup turns up with Blumenthal's equally timeless triple cooked chips. Prepare to be transported to the Middle Ages for a dessert of 'Sambocade' (c.1390) comprising goats' milk cheesecake, elderflower and apple, perry poached pear and smoked candied walnuts.
