Among the many and varied gastronomic offerings within the Dorchester group, there's sure to be something to inspire, and those who fancy a steak should make a beeline for CUT. This is the London offshoot of a Beverly Hills original, and while it also trades in prime beef's best friend, prime lobster (in salads, club sandwiches, and with crab in a tomato- and horseradish-laced cocktail), real beef is the principal focus. Australian and Japanese wagyu, Black Angus burgers, South Devon filet mignon, USDA rib-eye minute steak with fries: they're all here, aged wet or dry, sold by weight, and timed to the second on the grill, with eight sauces to choose from. The menu offers other fare, perhaps prawn and asparagus risotto with parmesan, followed by Label Rouge black chicken with morels in thyme jus, but there's no mistaking why most punters have pitched up here. If you feel you deserve a pudding after all that, finish with banana brūlée cream pie, gāteau opera with espresso ice, or sticky toffee date cake with apricot jam. The cheeses come with nut bread, quince paste, candied walnuts and honeycomb. And then, after a period of tranquil digestion, a run in Hyde Park might appeal.
