With its open kitchen, a cÚviche counter, a charcoal grill and a glamorous pisco bar, Coya is a hive of Peruvian-inspired activity. Expect classy food that are full of entertaining South American and Japanese fusion flavours and spot-on ingredients, such as a sea bass cÚviche in a bracingly astringent coriander and chilli marinade, supported by red onions, sweet potato and white corn. The meat cookery is also impressive, as seen in a plate of expertly chargrilled lamb chops with roasted tamarillo and garlic chips, or perhaps a rib-eye steak with chimichurri from the Josper oven. Finish with salted caramel ganache and pisco and raspberry sorbet.
