A sleek art deco look of golds and blacks, combined with jaw-dropping views from floor-to-ceiling windows adds a James Bond-style grandeur, as does the bar with its city slicker-friendly cocktails and hearty bar snacks. Executive Chef Paul Walsh extracts maximum flavour from humble ingredients and the well-presented, globally-influenced dishes have roots firmly planted in the classics. Try an opener of slow-cooked Tidenham duck with a harmonious match of amarena cherries, pistachio yogurt and hints of five spice and dried vinegar. Those searching for more international flavours can look to a main of Cornish line-caught cod and squid teamed with spicy ponzo, bok choy, miso aïoli and seaweed or Middle White pork loin and belly served with violet artichoke, shallots and black onion crackling. The technical prowess continues with a light and airy Kentish morello cherry soufflé with cherry jam and chocolate ice cream. The lively, interesting wine list offers plenty of diversity.
