The Michelin building merits a visit for the art nouveau wall friezes and mosaic floors of the ground-floor oyster bar. But the first-floor dining room has a special magic, particularly on bright days when the Michelin man stained-glass windows light up an amazingly luminous space. A new head chef took over the reins in April 2015, but traditional French dishes still mix with modern British ideas on the re-jigged menu. You might start with Burgundy snails - a fixture for 28 years - ahead of a tranche of turbot with béarnaise sauce, or two might share a roasted guinea fowl. To finish, perhaps an Armagnac baba with prunes and vanilla ice cream.
