New Basque cuisine has a way to go in Britain before it's as ubiquitous as Indian or Chinese. But in London, at least, the opportunity to enjoy this northern Spanish region's earthy flavours awaits at The Halkin by COMO luxury hotel in Belgravia. Here top chef Elena Arzak, of San Sebastián's famous restaurant-owning dynasty, oversees the culinary output of this curiously but pragmatically named eating place. Just off the lobby is the Halkin Bar, where the 'Flights of Sherries and Brandies' menu includes tapas and Western classics options. Star attraction in the restaurant - food apart, naturally - is the ceiling, from which hang myriad spice-filled glass tubes (7,000 if you must know!), a conversation piece that's enough initially to distract one from the menu. Start perhaps with foie corn cob, cocoa and vinaigrette dressing, then a tuna main course served under a glass dome with a seared, nay possibly even smoking, cinnamon stick and apple purée. For dessert, how about a rich and tasty orange French toast and spinach, rhubarb foam and tomato ice cream? Pairing dishes with wines proposed by Ametsa's sommelier, the tasting menu comes at a higher price.
