Behind a grand facade on Halkin Arcade, Amaya has taken the traditional grilled food of the Indian subcontinent and glammed it up for the Knightsbridge postcode by injecting a bit of contemporary sophistication to proceedings. The room has a sleek modern finish, colourful artworks from Kerala and Bengal, and a centrepiece open kitchen where you can watch the action at the tandoor ovens. The tandoor takes centre stage as the primary cooking method alongside the tawa (flat griddle) and sigri (charcoal grill), and you can order large or small plates to suit your mood (sharing means you get to try more things). The food arrives in waves, as it is ready, so get ready for succulent chicken tikka fired up with black pepper, chargrilled sea bass served on a banana leaf, chilli lamb chops, and some interesting veggie options such as paneer tikka or griddled white sweet potato with tamarind and yogurt. Methi chicken biryani is an alternative to the grilled options, and the platters are a good bet if you're feeling indecisive. Finish with chocolate Rasmalai surprise - a pretty construction with a lime sponge at its centre - or grilled fruit kebab with saffron shrikhand.
