Inver Lodge and Chez Roux

Albert Roux, co-founder with brother Michel of Le Gavroche (see entry), oversees the kitchen at Inver Lodge, a purpose-built hotel with commanding views from its hilltop perch of the village and the sea beyond. Reminders of his association with the place are everywhere, from sketches on the walls to napkin holders in the restaurant, where floor-to-ceiling windows give bird's-eye views, and comfortable upholstered chairs are pulled up at polished tables. 'Hearty country cooking' is the self-designated style, which translates into a poached pike quenelle with brown shrimps and sauce Nantua, then confit pork belly with choucroute, tomato confit and cider and apple jus. A daily fish special might be a complex and well-composed trio of sea bass, sea trout and plaice, rolled and stuffed with salmon mousse, served on crushed minted peas with seafood tortellini, surrounded by vibrant lobster sauce. Albert Roux's classic lemon tart is a stalwart among puddings, and equally impressive is tarte Tatin, the plate dribbled with apple syrup and a scoop of yoghurt sorbet adding good contrast.
