Birdwatching, fishing and hill walking are all possibilities at this stylish Victorian hotel with lovely views over the lake. Local produce is the backbone of the kitchen's output, some from the estate itself. You might begin with a full-bore partnership of pan-fried quail breast with apple and brandy purée, candied walnuts and balsamic, followed by roast duck breast with cider-braised potato, baby gem lettuce, sweet caramelised onions and a red cabbage purée full of mulled fruit spiciness. Fish is handled deftly, perhaps roast halibut with samphire, pink grapefruit and basil sauce, buttered spinach and a prawn raviolo. Pudding might be lemon curd tart with sweet basil mousse.
