The stripped-back interior of the old carriage workshop is a very modern setting with decorative shards of floor-to-ceiling glass and lots of exposed bricks, plus large windows to give a view of the street action. There's plenty of room between the light wood tables and the young service team are attentive. The menu makes much of provenance and there's a satisfying regional flavour to the food. A terrine of seasonal British game might kick things off, with a Liverpool gin and blackberry dressing, moving onto pan-roasted halibut with crispy Cumbrian air-dried ham, and finishing off with a pear tart with almond milk gel and praline ice cream.
