In the Bailgate district of the cathedral quarter, the Tower benefits from all the charm that medieval Lincoln has to offer. The backbone of its operation is finely detailed, up-to-date cooking, heralded by the arrival of a basket of home-made breads and flavoured butters. Gels, dusts and purées in profusion give evidence of an understanding of fashionable textural variety. The range might open with a smoked haddock 'Scotch egg' with pea coulis and lemon gel, proceed to pork belly braised for 36 hours, served with champ, sage custard and Bramley apple gel, and conclude triumphantly with shortbread-crumbed cinnamon brûlée with anise-roasted plum and clementine gel.
