Sourcing from within the county supplies a menu of populist brasserie dishes, with an Irish contemporary gloss on international ideas. Start with two slices of duck roulade zinged up with five spice on ginger- and sesame-dressed saladings with kumquat marmalade. That could lead to a brace of sea bass fillets saltimbocca-style, wrapped in Parma ham and sage leaves, or chicken breast with truffle-oiled mash in wild mushroom and tarragon cream. The chocolate marquise packs a mighty punch, and is nicely offset with a sharp raspberry sauce. Good breads come with intensely anchovied tapenade.
