Chef-patron Bruce Wass's weatherboarded country inn is well worth hunting down. There's a cosy bar area with casks on trestles and a rustic-chic restaurant with sage-green walls, colourful works from local artists, dark oak flooring and rough-hewn oak slab tables. The kitchen delivers punchy, contemporary cooking built on the freshest, local and seasonal produce. Foie gras comes pan-fried and as a velvety parfait with celeriac, Madeira jus and toasted brioche in a full-throttle opener, while Kentish lamb rump arrives with morcilla-stuffed piquillo peppers, fondant potato, peas and broad beans. End with chocolate, coffee and cardamom truffle cake with salt caramel ice cream.
