Fitzpatrick Castle Hotel

The castellated house was built in the 18th century, and despite having something of a martial career, now offers a range of hospitable dining venues including the Grill, housed in the former dungeon, where wine-red banquettes and exposed stone walls are the background for a menu of well-wrought modern brasserie cooking. There's no wild experimentation here, just good honest preparations of prime materials. Expect rosemary-scented seared scallops on an underlay of wilted spinach, as the prelude to pistachio-crusted rack of lamb on champ, or monkfish with minted pea purée in saffron sauce. Finish with frozen winter berries and coconut ice cream.
