The grandiose 16th-century Rushton Hall is resonant with some of English history's greatest hits - or misses, as the case may be. The Tresham family who once lived here got mixed up in the damp squib that was the Gunpowder Plot. At the more illustrious end of things, the Hall received guests from a cast of famous characters that included Charles Dickens. Dinner guests still gather for aperitifs in the Great Hall, before a stately progression to the handsome dining room, where service from silver trays is the norm and classical music plays. Adrian Coulthard's modern British dishes are very much flavour-driven, with simple presentations of contemporary classic ideas. An Indian spin is given to a first course of seared scallops that comes with little cauliflower beignets, crisply puffed rice and raisins, while the loin, scrag and sweetbread of local lamb, the neck meat encased in a potato tube, make a distinguished ensemble for a main that also features aubergine, tenderstem broccoli, spring onions and anchovy. Fish might be seared turbot with smoked salmon tortellini in cockle broth. At dessert, a lemon study delivers plenty of penetrating tang in the various forms of mousse, meringue and curd, accompanied by a fragrant basil sorbet.
