The phrase '18th-century elegance' perfectly sums up the setting of Wedgwood-green walls, chandeliers and white linen in Thainstone House's fine dining restaurant (it's named after one of the hotel's ghosts). The food, however, is distinctly modern British stuff, delivering smart contemporary dishes full of vibrancy and bold strokes. Pan-seared wood pigeon with beetroot carpaccio and celeriac purée opens the show, followed by a main course that showcases the quality of locally-sourced produce: breast of Gartmore chicken with skirlie bonbons, carrot purée, crispy kale and tarragon jus. Desserts also dazzle, especially rhubarb pannacotta served up with star anise syrup, lavender shortbread and frozen yogurt.
