There aren't many places around like The Little Fish Market, where a chef works alone in the kitchen and a solo server manages front of house, and especially not that turn out food of this standard. Chef-patron Duncan Ray has worked at The Fat Duck and Pennyhill Park, so knows a thing or two about top-end dining, and he offers - just off Hove's busy Western Road - stunning sustainable seafood cooked with attention to detail, accuracy and a thoughtful creative edge. The venue is simply done out with seafood-themed prints, wooden tables and a soothing neutrality, and it is comfortable and atmospheric in the evening. The fixed-price menu offers no choice and depends on what's been landed that day. Start with lemon sole topped with a thin layer of seaweed - simple and elegant - before 'rock pool', a crystal-clear dashi broth poured over white crabmeat, sweet brown shrimps and plump baked oyster. Next up, salt-cod brandade with sweet roasted red pepper and sauce gribiche, then a stunning piece of monkfish with carrot purée flavoured with star anise, squid, wilted gem lettuce and peanuts. Valrhona chocolate delice is a fine finish, matched with salted caramel ice cream.
