The former city asylum is the setting for HdV's Edinburgh outpost. These days the setting is considerably more cheerful thanks to the group's trademark gentleman's-club look of well-worn leather seats and woody textures. There's a splendid tartan-clad whisky snug, plus a buzzy mezzanine bar overlooking the bistro, which offers the usual nods to France with its wine-related paraphernalia and hearty, rustic contemporary brasserie cooking that the group specialises in everywhere from Royal Tunbridge Wells to the Scottish capital. A classic soupe l'oignon is an appropriately Gallic starter, followed by roast salmon with braised Puy lentils, button onions and pancetta. Finish with zesty lemon tart.
