Hintlesham Hall never fails to impress, a beautifully proportioned building of three wings, the fašade a 1720 addition to the 16th-century core. The interior is equally impressive, with all the elements expected in a grand country-house hotel, from oil paintings to antiques. The Salon dining room is truly stunning, with ruched drapes at the windows, an ornate fireplace, and portraits on white walls contrasting with a red carpet. The kitchen works around a slate of contemporary ideas and displays a level of originality not commonly seen in such surroundings. Thus, pan-fried scallops are served with spicy cauliflower dhal and coriander dressing, and peppered haunch of venison comes with aubergine, caramelised onion chutney and cranberry bonbons. Main courses show a level of restraint to allow flavours to be clearly defined: monkfish is studded with garlic and accompanied by chilli mash and a tarragon infusion, and slow-cooked belly pork by pork cheeks with chorizo and braised root vegetables. Desserts are as well constructed and attractively presented, among them pear and walnut frangipane tart with butterscotch ice cream.
