Hintlesham Hall is a beautifully proportioned building of three wings, the facade a 1720 addition to the 16th-century core. The interior is equally impressive, with all the elements expected in a grand country-house hotel, from oil paintings to antiques. The Salon dining room is truly stunning, with ruched drapes at the windows, an ornate fireplace, and portraits on white walls contrasting with a red carpet. The kitchen works around a slate of contemporary ideas and displays a level of originality not commonly seen in such surroundings. Pan-fried scallops are served with butternut squash purée, a salted sesame tuile and tarragon dressing, and venison haunch carpaccio could come with onion and goats' cheese croquettes, watercress essence and a port reduction. Main courses show restraint to allow clearly defined flavouring: seared medallions of monkfish are accompanied by tiger prawns and a shellfish reduction, and slow-cooked pork belly, tenderloin and cheeks are helped along by star anise sauce. Dessert might bring pear and green tea sorbet with melon and passionfruit sauce.
