This old brick and flint inn is in an Area of Outstanding Natural Beauty at one of the highest points in the Chilterns. A makeover has given the interior a stripped-back look, with rugs on polished wooden floorboards and plain wooden tables, chairs and benches. This is the sort of pub that every village should have, not just for its ales and atmosphere but for the quality of its modern British cooking. Perfectly roast local pigeon comes with a salad of beetroot, pine nuts and rocket enhanced by raspberry dressing to make a particularly effective starter. Sauces and gravies never fail to impress among main courses: one of star anise jus for confit duck leg with fondant potato and red cabbage, a rich red wine reduction for tender organic roast chicken breast with root vegetable mash, roast parsnips and kale. The kitchen's no slouch when it comes to puddings either: try caramel pannacotta with berry comp?te.
