The Feversham Arms has oodles of contemporary style behind its old stone frontage, with a restaurant of dark walls under its vaulted atrium and banquettes and designer-style seating at correctly set tables, an appropriate setting for sharp and sophisticated cooking built on fine regional ingredients. Pan-fried foie gras with mulled pears and brioche seems entirely appropriate for a hotel in an affluent market town, and there might also be accurately made ravioli stuffed with scallops and shrimps. Seasoning and timings are just so and flavour combinations well considered, seen in pan-fried cod loin with fish velouté, parmesan dumplings and parsnip purée, and roast duck breast with green peppercorn sauce, shallot tarte fine and celeriac purée. Good breads are all part of the package, and tempting desserts have included figs poached in red wine with parkin and yogurt sorbet, and vanilla parfait with blueberry compôte.
