The Feversham Arms gets its name from the earl who rebuilt an old coaching inn in 1855. He wouldn't recognise the distinctive hotel today, complete as it is with lovely gardens, spa and all-year heated outdoor swimming pool. The cosy lounge with its comfy sofas and open fire is an inviting place to enjoy a pre-dinner drink (and perhaps a post one too), before moving through to the very different look and feel of the restaurant - a fashionably smart conservatory-style room, with artwork hanging on red walls, banquettes and bucket seats at properly set tables, and a wonderfully intimate, romantic ambience at night. The cooking is based on Yorkshire's larder of pedigree goodies, and Simon Kelly displays a high degree of culinary skill and imagination. Dishes are intelligently composed to bring out distinct flavours without tipping over into pretension or gimmick. Foie gras mousse, for instance, is partnered by nothing more than lovage-infused blackberries, and Portland crab by watercress velouté and buttermilk. Among the handful or so of main courses may be corn-fed chicken, succulent and full of flavour, with Puy lentils, pancetta, oyster mushrooms and sauce Jacqueline, which sounds pretty standard but turns out to be a masterly multi-flavoured dish. Equally satisfying on the palate is a fish option: perhaps accurately timed fillet of wild halibut accompanied by truffle, fennel and shrimps in crumbed rye bread. Innovation is given free rein with puddings: witness ras el hanout bananas with coffee, Muscovado and treacle mayonnaise, or chocolate pannacotta with nougat and - wait for it - spiced mirin jelly.
