Sophisticated cooking built on fine regional ingredients is the order of the day here. Seared scallop with warm apple jelly, black pudding and smoked roe emulsion seems entirely appropriate for a hotel in an affluent market town, and there might also be veal sweetbread with turnip and wood sorrel. Flavour combinations are well considered, seen in fillet of turbot served with an oxtail ravioli and Judas's ear (a mushroom), and fillet of pork Wellington with wild cabbage and a Taylor's tea and prune purée. There are 32-day aged steaks, too, served with triple-cooked chips, with good breads also part of the package. Tempting desserts have included chocolate and banana millefeuille.
