The former home of Sir William Gilbert (Sullivan's dramatic mate), Grim's Dyke is a grand house in 40 acres of well-tended gardens and natural woodland. Gilbert's Restaurant occupies what was once the billiard room. Traditional decor remains in keeping, the formal tone maintained by uniformed staff. The kitchen displays affection for English classics such as fish and chips and beef stew with dumplings, but there's a lot more going on here, expanding into a broader repertoire of classic European influences. Beetroot-cured gravad lax with smoked salmon mousse and root slaw might precede venison au poivre with dauphinoise, with desserts such as pistachio and griottine brûlée.
