A double-act operation with Mary Runciman and Keith Marley at the stoves. Menus change regularly and the deal is just a couple of choices per course, kicking off with courgette and rosemary soup with apple crème fraîche, or twice-baked cheese soufflé with chives and tomato cream. A high levels of skill is evident in main courses: perhaps braised salmon partnered by crushed new potatoes with spring onion and smoked salmon, and tarragon and tomato sauce, or guinea fowl, its poached and seared breast teamed with confit leg, dauphinoise potatoes and a guinea fowl and mushroom jus. For dessert, vanilla pannacotta is contrasted with poached nectarine, raspberry sorbet and shortbread.
