Greywall's enviable location overlooking the famous Muirfield golf course has long made it a destination hotel for sporting types, and these days it also lures foodies from far and wide with its imaginative Scottish cuisine. A dignified Lutyens country house with pretty gardens created by Gertrude Jekyll, it offers elegant Edwardian comfort in the form of sumptuous sitting rooms whose deep sofas beckon for pre- and post-dinner drinks. The restaurant is comprised of two peaceful rooms with well-spaced, well-appointed tables and comfortable chairs, and more views over the golf course. Traditional formalities mean jackets and ties for gentlemen and formal, though friendly, service. The kitchen's modern Scottish approach is underpinned by classical French techniques and combinations, the cooking focusing on high-quality produce from the abundant Scottish larder. You might start with honey and lime roast quail with pea purée, bacon and lettuce, or a salad of rare roast beef with gherkins, olives and pesto, followed by roast organic salmon with a lentil cassoulet, foie gras and Sévruga caviar, or saffron and gold leaf risotto with langoustines, fine beans and cress.
