If Grindleford sounds like the made-up location of a Miss Marple mystery, The Maynard suits it to perfection, its stone-built majesty rising out of the Derwent Valley. Lightly sautéed breast of wood-pigeon opens the show, served with braised baby leeks and puréed butter beans in port reduction. This is followed by accurately timed sea bass dressed in lemon, with Jersey Royals and a summer salad of peas and rocket, or 'chicken cooked two ways', confit leg and poached and roasted breast (so three ways, really), with lemon spinach and colcannon in tarragon sauce. Finish with a multi-faceted coconut tasting, its chocolate mousse and sphere of sponge cake the highlights.
