The Hallams picked a formula when they opened here about 30 years ago, and they have quite rightly seen no reason to change it. In a converted farmhouse on the road through Great Gonerby near Grantham, the red-walled dining room is a pocket-sized haven of civilised hospitality, where Caroline sees that all is well out front and Harry struts his stuff in the kitchen. The menu format is as compact as the venue, a daily-changing rota of two choices at each stage, opening with a soup such as truffle-oiled mushroom, or something more artfully composed, perhaps smoked salmon cured in sloe gin, served with vodka crème fraîche, mango, avocado, lime and ginger, dobbed with caviar. Harry is a dab hand with alcohol-fuelled sauces and dressings, as may be seen again in mains, when white wine and Pernod light up a dish of sautéed brill with egg and capers, or red wine and Armagnac add richness to Lincoln Red beef fillet with tomato, onion and olive relish and horseradish mayonnaise. Expect to finish with prune and Armagnac ice cream garnished with passionfruit, or the famous cherry brandy jelly with yogurt and black pepper, or take up the option of a cheese extra, with finest English, Welsh and French specimens.
