In an area of the Borrowdale Valley hailed by Wainwright as one of the most picturesque in the Lake District, this classic Lakeland country house is set in the heart of prime walking territory. The kitchen has ramped up its efforts since the hotel's recent refurbishment, turning out a confident take on modern British dishes cooked with skill. Start with pan-seared Scottish scallops, smoked black pudding, apple and raisin purée, salsify crisps. Proceed to breast and crispy leg of corn-fed chicken, baby leeks, thyme gnocchi and wilted kale. End with blackberry pannacotta, apple tart and green apple sorbet.
