A champagne and oyster bar with rooms in a Kentish village not far from the M20 designed with racy opulence. A menu of modern classics - scallops with cauliflower purée, beetroot and goats' cheese salad with candied walnuts and celery shoots, cider-braised pork belly with red cabbage, damsons and crackling - is brought off with persuasive aplomb, and prime ingredients are excellent. Witness a thyme-infused breast of corn-fed chicken with pearl barley and bacon risotto, served with charred baby onions and buttered cabbage. Shellfish platters and thermidor will please seafood purists, as will sticky toffee pudding with butterscotch sauce and salted caramel ice cream.
