We've Italian designers to thank for the super-cool finish within this luxe spa and golf hotel on the cliffs. The high-end finish extends to the restaurant, where a huge bronze female centaur keeps watch, lighting and music are soft, and the decor is cool black. The food matches this modernity and creativity, partnering poached mackerel fillets with rhubarb (poached, gel and a tart), and white chocolate-covered capers. There's real technical proficiency in a main course showcasing lamb - rack, sweetbreads and shoulder - with wild garlic pommes Dauphine and goats' cheese jus. Dessert brings strawberries in another multi-faceted workout involving purée, sorbet, salsa, macaroon and vanilla pannacotta.
