The highly experienced French chef-patron cooks with confidence and delivers a classically-inspired repertoire via a short bi-lingual carte. An impressive opener might be steamed fillet of salmon and mussels in a flavourful saffron sauce, before roast fillet of John Dory with another fab sauce (tarragon this time), or go for a meat option such as herb-crusted rack of lamb with dauphinoise potatoes and basil jus.
