Head for the Burlington Restaurant - a snappy modern brasserie-style space in tones of red and cream, setting the tone for straightforward up-to-date food. Built around good quality seasonal ingredients that the kitchen sources from local farms and trusted suppliers, a starter of rainbow trout is served with caper mayonnaise, smoked pea purée and chervil, followed by Gressingham duck breast with pearl barley, beetroot, carrot, shallots and celeriac. If you're in the mood for fish, monkfish might come with purple kale, samphire, cauliflower purée and Parma ham. Dessert is a satisfying confection involving rhubarb and ginger cheesecake, orange sponge and gel, and rhubarb sorbet.
