Built in 1821 as the grand headquarters for the Royal Scottish Automobile Club, this building has been injected with a good dollop of boutique style, plus a luxurious 21st-century spa, resulting in a hotel of real verve. The restaurant in the former ballroom mixes contemporary decor with high ceilings and ornate plasterwork - a setting that says switched-on and modern, with food to follow suit. Seared scallops with curried pumpkin purée and pickled butternut squash set the tone, while pork belly from the Josper grill comes with mash, black pudding and apple sauce. To finish, there's sticky toffee pudding with candied pecans and bourbon ice cream.
