The old Bull started life in 1688, serving travellers on the road between London and Oxford, and has morphed over from a simple coaching inn into a swish four-star hotel with tip-top facilities. Its Beeches restaurant has a smart contemporary look involving boldly-patterned carpets, tones of burgundy and cream, unclothed tables and a Mediterranean-accented menu that keeps abreast of the times. Consider ham hock terrine with home-made piccalilli, griddled sourdough bread and beetroot pearls to start. Follow with something like cod loin with Swiss chard, parsley purée, sautéed parsley root, beetroot carpaccio and chorizo crisp, or pork fillet and braised belly with black pudding, apple purée and red wine sauce. Puddings can be as true Brit as Cox's apple tart with rhubarb crumble ice cream and toffee apple, or as Gallic as chocolate fondant with Chantilly cream.
