The Tindalls' country inn in the Hope Valley charms, with a warm colour scheme, wooden pub-style furniture and a fireplace creating a relaxing atmosphere. The menu deftly steers between stalwarts and modern offerings. Open with roast pigeon breast, perfectly timed, with brown bread purée, pickled wild mushrooms, crisp brioche wafers and a rich jus, ahead of duck breast, the crisp skin rubbed with salt and pepper and sprinkled with caraway seeds, accompanied by salt-baked celeriac, Savoy cabbage, mash and an orange and red wine reduction. Standards continue into puddings such as orange and olive oil cake with orange curd and sorbet and walnut 'mayo'.
