Sitting on the harbour with a curving terrace cantilevered out over the water, a huge sliding glass wall to capitalise on the view and a classy, well-designed interior with oak floors, Rocksalt's menu has seafood at its heart, but there's also hay-baked rump of Romney Marsh lamb with anchovy potatoes or prime slabs of steak to keep carnivores happy. Start with smoked coley with creamy mash and a poached egg, and move on to poached cod fillet with samphire and celeriac and mussel broth, or roast thornback ray wing with hedgerow green garlic sauce. For dessert, there's baked egg custard tart with blackcurrant sorbet or buttermilk pudding with blood orange.
