Description

Unless you're in on the secret, you could be forgiven for thinking you were pitching up at a classical Restoration manor house, with its gabled façade, mullioned windows and balustraded entrance. In fact, Baslow Hall, built on the edge of the Chatsworth estate, is a painstaking Edwardian pastiche of the 17th-century manner. Sweep up the chestnut-lined drive, and take time to look at the magnificent gardens, before progressing to the lavishly appointed dining-room that is Fischer's. Elegant table settings, log fires and an intimate ambience provide a backdrop for the stylish modern European cooking, which uses plenty of local produce, underpinned by classical French techniques. Dishes are highly inventive, built around outstanding combinations that leave you eager to explore the next one. A seven-course Prestige Menu, with cheeses as an optional extra, is the way to do so comprehensively. Textures of foie gras is a signature starter, in which the liver is presented three ways - pan-fried, cured and warm - with accompaniments such as spiced cherries and 'cappuccino' dressing. Foamy sauces are a preferred method of presentation, as with the potato version that comes with poached turbot, alongside a leek terrine and hazelnut emulsion. Local venison is served in the form of roasted loin, with a glazed chicory tart, red cabbage, parsnip purée and a juniper-scented jus, and meals end with high-impact desserts such as pistachio terrine with chocolate 'soil' and green tea sorbet. Imaginative amuse-bouche and pre-desserts are all part of the deal. Home-baked breads include beautifully light ciabatta, while coffee comes with a phalanx of moreish petits fours.

We continue to be impressed with the high standard provided, and despite sampling others, we are always drawn back to Fischer's. Food is exceptional; it is creative and varied, and our taste buds are never disappointed. There is great comfort in the bedrooms, if you wish to stay, and wonderful hospitality from the well trained and attentive staff. A superb location; a beautiful house; immaculate gardens, all within minutes of breathtaking countryside. A perfect value for money package.
