This fine Edwardian house, built in the style of a 17th-century manor with protruding wings and mullioned windows is reached by a winding driveway lined with mature chestnut trees. It's a grand enough spot, but built on an intimate scale - more a restaurant with rooms than the full stately home schtick. With just 6 tables and the recent de rigueur addition of a chef's bench in the kitchen to tend, the formally-dressed service team bring polished attentiveness to the whole experience. Rupert Rowley is a formidably talented chef whose willingness to experiment without straying from core values of flag-waving sourcing of seasonal produce is paraded at dinner in his 'Classic Menu', and a 'Taste of Britain' tasting menu, and in a lunch offering that's rather easier on the wallet. The on-trend combinations and pin-sharp techniques seem to exist in a parallel universe to the genteel formality of the dining room, so things get off to a flying start with the vibrant canapés and fabulous breads (among them black treacle and stout, and hazelnut and raisin), before sous-vide cooking brings melt-in-the-mouth tenderness to a game starter of hay-baked partridge with pan-fried foie gras, celeriac and truffle dumplings and ceps. Otherwise, start with pan-fried scallops with an Asian-accented medley of toasted sesame purée, rice cracker and ponzu dressing. Mains showcase pedigree meats such as perfectly-cooked saddle of wild venison matched with roast pear, date purée, Brussels sprouts, trompette de mort and shimeji mushrooms and chocolate sauce. If you're in the mood for fish, it is equally well handled: pan-fried John Dory might come with beetroot fondant, toasted almonds and thyme velouté. It all ends with a playfully inventive dessert involving a chocolate tree trunk with sap-green lime sorbet and purée, spearmint 'moss' and chocolate sorbet.
