Once an 18th-century coaching inn, this hotel has had a modern makeover, with the Red Sails Restaurant sporting a suitably shipshape look involving bare brick walls and vibrant red stripy upholstery. The kitchen couldn't be in a better spot for hauling in Kent's rural and coastal bounty, which is used to good effect in a well-crafted main course of lamb loin and slow-cooked belly, with shallots, milk curd and pearl barley. Bookending that, a starter of foie gras parfait and confit duck leg is offset by tangy rhubarb chutney and gingerbread, while dessert brings lemon curd tart with meringue and iced tea and lime sorbet.
