In an absolutely stunning location on Lough Erne, set expansively in 60 acres on its own peninsula, this is a truly indulgent five-star treat. From the golf course (due to be home to the 2017 Irish Open) to the Thai spa to the restaurant, there's no messing around at this purpose-built hotel. Fine dining takes place in the spacious, vaulted Catalina restaurant with views across the lough and golf course. Noel McMeel's kitchen is working at the top of its game, producing thoughtful, exuberant modern Irish cuisine. Vegetarians will be delighted with their own menu, and the standard à la carte is just as considered. A starter of Liscanner crab comes with equally local scallop, from Ballycastle, Rathlin Island seaweed, samphire, and fresh lemon curd. Mains might include rump of Glenhoy lamb with potato and onion gratin, black garlic, grape and red wine mustard, carrot purée and red wine jus, or the signature 'Lough Erne Pork Dish' - fillet of pork, pork cheek, ham hock black pudding palmier and pork belly. Have a lemon tart with raspberry sorbet and croquant tuile to finish, or creamed rice pudding with poached plums and white chocolate ice cream, or else choose from the cheese menu.
