The Laura Ashley empire includes this 16th-century manor house restyled in plenty of contemporary beige. Setting off the mullioned windows in the Cavendish dining room, it makes for a cheering ambience in which to eat some well-considered country-house cooking. Purées abound, apple for the ham knuckle terrine, and the expected cauliflower for scallops in a lively currant and peppercorn dressing. Main courses explore the possibilities of gentle slow cooking for braised beef with glazed baby onions, mushrooms and creamy mash, or potato-crusted sea bass with Brussels sprouts and pea purée. Finish with the sensational trifle, a treat all the way from its crushed amaretti topping to its cherry compôte foundation.
