Plas Ynyshir was once owned by Queen Victoria, who had many trees planted on the estate, and birdsong floats around the splendid gardens within a 1,000-acre RSPB reserve. Rob and Joan Reen have established it as one of the foodie destinations of Wales, while Rob's vibrant sheep-themed paintings adorn the lavender-hued dining room walls. Head chef Gareth Ward completed a three-year stint at Sat Bains in Nottingham before heading west to continue weaving intricate interplays of flavours, texture and temperature. It's all delivered via daily-changing five-course lunch and dinner menus and minimally-worded eight and eleven-course tasting options, founded on ingredients of the highest possible order: Welsh lamb and Wagyu beef, fish from Cardigan Bay and local rivers, produce from the gardens and foraged wild ingredients. Opening the show, the signature 'Not French onion soup' is made from Japanese dashi stock flavoured with onion oil, diced tofu, pickled shallots, sea vegetables, onion and miso purée and brown butter croûtons. Sea-fresh mackerel arrives in a creative medley with apple, bramble and pork back fat, duck liver comes with Cox's apple, eel and spelt, while elder and bitter chocolate could be used as accompaniments to roast grouse. Melt-in-the-mouth Welsh Wagyu beef features in complex multi-part presentations: in a 'burger' with shallots and sesame seeds, perhaps, or glazed with soy sauce and Marmite and matched with pickled shiitaki mushrooms, and in a deeply-flavoured beef 'fudge'. Then Tunworth cheese with carrot, cumin and rye provides a crossover dish before desserts such as a deconstructed tiramisù, or an exotic chocolate and banana composition counterpointed by the bracing flavours of miso, lime and coriander.
