A hotel and cookery school are part of the set up here, along with a barn-style dining room with high ceilings and exposed timbers. Proceedings open with a smoked haddock Scotch egg with pickled cucumber and lemon mayonnaise, before moving on to pan-fried chicken suprÍme partnered by confit garlic-infused crushed potatoes, purple sprouting broccoli, wild garlic pesto and toasted pine nuts, or perhaps citrus and herb-crusted rack of Romney Marsh lamb with lyonnaise potatoes, carrots and leeks, and a red wine reduction. To finish, there are Kentish cheeses on hand for those determined to resist the allure of pear and frangipane tart with Amaretto ice cream.
