In the New Town area of Edinburgh, Stac Polly occupies a labyrinthine cellar and serves up Scottish dishes with the twang of a French accent. Housed in a 200-year-old building, the place has loads of character thanks to stone floors, bare brick walls, linen-clad tables, and there's even a small outside courtyard if you fancy a bit of alfresco eating. The well-judged cooking sees some interesting flavour combinations and a few firm favourites such as haggis filo pastry parcels stay on the menu by popular demand. Start perhaps with queen scallops grilled in the shell and topped with a smoked salmon and citrus butter, followed by a multi-component main course such as suprême of halibut with a parsley crust, citrus and dill mash, broccoli and creamy curry sauce with fresh mussels.
