A sophisticated dining room in an elegant Georgian building, all calming blue grey walls and white-clothed tables. Light enters through large sash windows and the dramatic fanlight above the doors that lead onto the plant-filled terrace. Having represented Scotland on The Great British Menu, and cooked at such high-flying establishments as One Devonshire Gardens, Glasgow, and Kilcamb Lodge, Strontian, Mark Greenaway is one of the prime movers and shakers north of the border. He's also a proud supporter of local produce and suppliers, and his carefully constructed menus demonstrate exactly what's best in the seasonal larder. Options include the seriously good-value lunchtime and early evening Market menu, with three choices at each course, the standard carte or, if everyone on your table can agree, the eight-course tasting menu. This gives the kitchen a chance to really show what they're about, but whatever you choose there's plenty going on to keep you interested. Things might kick off with a pressing of Perthshire pheasant, with carrot and ginger gel, sweet cicely mayonnaise, bread tuile, boudin blanc and baby carrot, or 'cannelloni' of Loch Fyne crab with smoked cauliflower custard, herb butter and baby coriander, a collection that goes well together, helped along by lemon pearls to mitigate the richness. Greenaway's dishes brim with flair and imagination, and everything feels tautly controlled and cohesive - Parma ham-wrapped monkfish, for example, with crispy chicken wings, baby turnip, confit carrots and brown butter jus, or the eleven hour slow-roasted Clash Farm belly pork with pork cheek 'pie', blackened fillet, sweetcorn and toffee apple jus. As for dessert, frozen rhubarb mousse comes with ginger and hibiscus jelly, pressed candy floss, popcorn toffee and Amaretti meringue.
