There's always a lively buzz at Ondine - in fact it's got such a loyal following, it's hard to believe the place hasn't been here for years. The central horseshoe-shaped crustacea bar is both a feature in the room and a declaration of intent - this place is about seafood, and top-notch sustainable Scottish seafood at that. Just off the Royal Mile, on George IV Bridge, it's a modish space with great views out over the old town. Start with rock oysters (Loch Fyne, Cumbrae, Carlingford), either as they come or cooked (tempura or thermidor, perhaps), or something like a textbook fish and shellfish soup with the trad accompaniments of rouille, gruyère and croutons. Chef Roy Brett shows a sensibly steady hand when it comes to treating the first-class piscine produce at his disposal, so nothing is overworked and everything tastes just so. Thus main course might be a simple roast shellfish platter, risotto nero with grilled chilli squid, Shetland mussel marinière, fish curry, or good old-fashioned deep-fried haddock and chips with minted pea purée.
