Ondine has earned a loyal following in a few short years, and it's not hard to see why: just off the Royal Mile, on George IV Bridge, it's a contemporary space with great views out over the old town. But sustainable seafood served amid an atmosphere of cheerful bustle is the main draw, and the ecological ethos is not empty marketing speak. You could take a high seat at the central horseshoe-shaped crustacean bar, or park on a stripy banquette and get things under way with oysters - four types, no less, either as they come or cooked tempura-style with Vietnamese dipping sauce - or something like a classic fish and shellfish soup with the time-honoured accompaniments of rouille, gruyère and croûtons. Chef Roy Brett takes a sensibly restrained approach, so nothing is overworked and every molecule of flavour is extracted from the first-class piscine produce at his disposal. Thus main course brings wild Cornish sea bass with squid peperonata and whipped artichoke, or meat fans might tackle a rib of Orkney beef served on the bone with bordelaise sauce and pied de bleu mushrooms. Finish with good old treacle tart, lifted with a zesty hit of lemon and served with clotted cream.
