Ondine has earned a loyal following in a few short years, and it's not hard to see why: just off the Royal Mile, on George IV Bridge, it's a modish space with great views out over the old town, but sustainable seafood served amid an atmosphere of cheerful bustle is the main draw, and the sustainability ethos is not empty marketing speak. You could take a high seat at the central horseshoe-shaped crustacea bar, or park on a stripy banquette and get things under way with oysters - 4 types, no less, either as they come or cooked (tempura or grilled with Charentais sausage, perhaps) - or something like a classic fish and shellfish soup with the time-honoured accompaniments of rouille, gruyère and croûtons. Chef Roy Brett takes a sensibly restrained approach, so nothing is overworked and every molecule of flavour is extracted from the first-class piscine produce at his disposal. Thus main course might be simple crab gnocchi with lemon and garlic, sea bream curry, or good old-fashioned deep-fried haddock and chips with minted pea purée.
