In the Cucina restaurant, colourful abstracts hang on vivid blue walls and modern, seasonal Italian cooking is the order of the day. Tagliatelle with pork ragł is a nicely balanced starter, or wander into the unknown with buffalo mozzarella with chocolate, prunes and candied chillies. Accurate cooking is the norm, with main courses never so complex as to muddy flavours. Pan-fried guinea fowl breast with savoy cabbage and pancetta, mixed mushroom, potato fondant makes a decent main course, and a freshly baked tiramisł with sweet whipped cream and a dusting of cocoa finishes things off nicely-
